Fruity Salmon: It’s What’s for Dinner

My housemates and I have a symbiotic relationship—I like to cook and they like to eat. When I threw something together yesterday, they swooned and begged and passed the plate and said I should turn my culinary forays into blog posts, so here’s the first in a series:

Tamarind and Cumin Salmon

This is a fillet of coho, rubbed with tamarind concentrate, cumin powder, brown sugar, mustard, kosher salt and a dousing of spicy Tapatio; then it was tossed into a pan (with a few shredded onions) of smoking-hot veggie oil and olive oil. I lowered the temp for a minute then flipped it while the sugary rub crusted brown. It’s served over brown rice, a mix of garlic, oregano, green peas and black beans, finished with the seared onions and shredded Monterey jack cheese. The red stuff is salsa and the white stuff is a drizzle of crema Mexicana to cool it down. The salmon was tart and sweet from the tamarind, with a bitter bite of the carbon from the onion and cumin to give it some muscle.

  1. Just by hearing what he’s said in past interviews, in sherdog’s current interview, and in what he’s said repetitively over and over and over again when aasked if he’s going to the UFC. It’s pretty much cut and clear and obvious that he isn’t and probably won’t ever come to the UFC. And anyone who thinks otherwise is just wishfull thinking or in denial.

    I am the wife of a high functioning alcoholic. He is a model employee in a middle level management business. He is an exemplary male parent who adores his two young boys and he has been a great husband to me (I can in all likelihood count the times we have increased our voices in angriness, in 20 years) and he is a good and earnest friend. His drunkenness has increased and stepped up since the birth of our 1st boy almost ten years ago. I inadvertently found out that he had been hiding vodka in our home office in the form of vodka airplane bottles. He imbibes beer in front of us but just drinks vodka behind closed doors. After 5 PM he gets drunken promptly and frequently doesn’t even last until the children’s bedtime. I want to screen my boys from his inebriation. I sought out help in the form of individualized therapy and al-anon, which has helped. I pressed him to seek out therapy and he did but was speedily let go of because, (by his own admission), he did not in full disclose. He has only lately sought-after the assistance of AA and it looks to be of some help. I am very unequivocal in the fact that I do not want to be co-dependant and that I want him to know that I strongly disapprove of the drinking while I want to offer some positive reinforcement when he does not imbibe.
